Chard-worthy

A few people asked what we do with our chard from the garden. Usually we pull the leafy goodness from the stem, wash, spin, chop and saute with garlic. Yum! Very yum, actually! The way that it cooks down to next to nothing makes you feel as though you are ingesting loads of vitamins and minerals.



Nice.

Today we decided to do something a little different. The recipe came from Epicurious.com - it is a Chard, Tomato and CHEESE cassarole..

So, here is the big ol' bunch of chard all de-stemmed, chopped and cleaned:


Chopping is a form of meditation for me. Here are the peppers that I got tooohtally on the cheap - on the overripe shelf - 4 for .79 cents! They were only the tiniest bit soft. The ones here were chopped along with the yellow onions.


Everything got all nice, sauteed and happy as I cooked up a bit of chicken sausage to go on top (not in the recipe). Yum!


Then add sliced tomatoes and cheese:


Final - Final......


Toasty cheesy yum. Nice unique way to deal with the abundance of chard in our garden!

Growing up in TX we had chard ALL the time! I miss having it especially in the summer time with the fried okra.

That dish looks awesome....each time you show what you do with your garden I get more and more motivated in planing for the garden next year.

Looks very yummy indeed. I'm passing this off to a friend who wondered the same thing. Hey, what do you do with eggplant? Zucchini? I have some ideas, but you seem to come up with creative ways to get the job done.

Ohhh, that sounds good. I think I'll try that this weekend - the chard has come in in abundance at the farmer's market. I made some last night sauteed with garlic, and added some grilled & sliced Italian sausage and rigatoni pasta. Good way to get the Boy Child to eat his greens!

Looked REALLY good. We occasionally add swiss chard (is that the same?) to mashed potatoes. Also quite yum and makes you feel like you are eating healthier.

yum - that looks lovely! well, frankly, anything with CHEESE is lovely - eh?

I cook a lot of spinach but not enough chard - i really do like chard! must try this :)
